Notes from Shannon Adams' Visit



Notes from the 1ST Wellness Wednesday: 10-Minute Meals with Shannon Adams of Honey Bee Bakery
Shannon Adams focused on tips and tricks for eating healthy when your time is limited. She highlighted the importance of planning your meals out in advance and making a little extra that you can take with you in your lunch the following day as two primary tips for maximizing your time and your wallet.  Here are a few examples you can modify to meet your schedule:



For example, Shannon said that she made chicken wings one night.  You can also use the same chicken for: 
1) fajitas
2) quesadillas
3) stir-fry  

She suggested making a big pot of black beans or lentils and a large batch of rice at the beginning of the week. These two staples can be used in many different meals such as:
1) chili 
2) tacos
3) stir-fry 

Pancakes are very easy to make.  Look for a whole grain mix at your store and make pancakes for dinner or save some and put peanut butter on it for a snack the next day.

For quick snack items: 
1) Veggie chips with kale, carrots, and parsnips all work great for veggie chips. All you do is slice them, coat them in olive oil, season to your liking, and bake until their crunchy.
2) Granola is also easy to make using oats, cinnamon, nut-meg, almonds, and raisins (or whatever you like).
3) Popcorn flavored any way (here are a few good ones from Martha, http://www.marthastewart.com/315089/flavored-popcorn). 

For those of us who are completely brand new to cooking, Shannon suggested that we keep a few main items on hand, such as:
1) apple cider vinegar
2) olive oil
3) a raw onion
4) a clove of fresh garlic
5) a couple of roma tomatoes
6) peanut butter (for protein)
7) eggs (they can be used in stir-fry, breakfast casseroles, quiches, hard-boiled eggs, and of course scrambled)

Finally, Shannon suggested that we revisit how we view cooking. If we can reframe cooking and preparing meals as an act of love and attention, we might not dread it so much (she mentioned that the Joy of Cooking is a great reference for cooking, even for beginners). She also mentioned that if shopping for fresh produce is too time consuming, that we could join a CSA that provides you with a selection of veggies that are fresh that week. She also talked about juicing as a great option for those who are short on time.

Wellness Wednesdays

Join us tomorrow for our first WELLNESS WEDNESDAY! Shannon Adams of HoneyBee Bakery will be here at 2pm in Room 1115 to talk about healthy meal options you can make quickly. Then at 3pm we will have our first Running from the Law running club meeting. So, lace up your tennis shoes and meet us in the Atrium at 3pm to fit a little physical fitness into your day. Couch to 5K training programs are available on the Wellness Table in the main lobby.
